If you travel to China and just see the big cities, you are missing out on a big cultural experience. In my opinion, some of China's richest history and culture is best experienced in a small town or village. I spent last week exploring a small prefecture in Fujian province called Yong Chun. While there, I tried my hand at calligraphy, kung fu, the performance art of tea making, and tinkered with some Chinese musical instruments - it was AWESOME.
